Celeriac soup

Celeriac soup is the perfect treat on a cold, rainy autumn day.

Celeriac is very healthy and contains more healthy nutrients than its appearance might suggest. Celeriac, for example, is a source of vitamin C, which is important for resistance. Along with natural sugars and folate, vitamin C also helps keep your energy up. Celeriac also contains potassium, which can contribute to healthy blood pressure.

PREPARE

Heat the olive oil in a saucepan and fry the celeriac, garlic, and shallot in it. Add salt and pepper and pour over the hot stock. Bring to a boil, cover, reduce heat, and simmer for 20 minutes until the celeriac is soft.

Mix with a blender until you get a slightly thickened soup. Season with flat-leaf parsley. Decorate with the boiled egg, some cheese, and ham, and serve immediately.
